Crab English Muffins

This is a very simple way to make a quick lunch or dinner.  Very good and has a kick to it as well!

~You Will Need
~1/2 pound lump crab meat
~6-8 English muffins
~1/2 cup light mayo
~1/2 cup dark brown dijon mustard
~1 cup grated cheddar cheese
~1 teaspoon cayenne pepper

Mix mayo and dijon mustard together.  Cut English Muffins in half and spread this mixture on top.  Add a good serving of crab meat on top of muffins and sprinkle each with a little cayenne pepper.  Top with cheddar and place in oven on low on broil.  Broil for about 5-7 minutes. Or until English Muffin is brown and cheese melted.
