Labor Day Cooking: Cajun Style

My husband who is from South Louisiana is an amazing cook!  He makes the best jambalaya I have ever had.  He competed in the "mini pot" section of the Jambalaya Festival last year in Gonzales, LA.  He had to cook a jambalaya over an open flame, which is very difficult to do.  It takes 2 hours, but it is AMAZING! So for Labor Day, he made a delish jambalaya!
